Update: I've finally located a record for my ancestor's 2nd marriage. She was recorded as 'Caroline S.' Balcomb, and she did in fact marry Elijah C. Mears on 10 Jun 1863 in Pleasant Grove, Olmsted, MN.

Supposedly they relocated to Iowa after marrying, most likely to Jackson County, so I am still seeking information about their deaths and burial locations. Caroline was supposedly buried in a place called Ma-ka-ta around 1869 and Elijah died in a place called Butternut Grove around 1878.

My thanks again to Sarah Thorson Little for providing me with the name of Elijah C. Mears.
