AMOS F. COLLINS
Amos, born in 1857, owned and operated a candy store in Mount Ayr.
He also
made ice cream which he sold in the store.

A. F. COLLINS
"Fatty" is a famliar word of the tongues of the rising generations of Mt. Ayrites. A. F. COLLINS, to whom that name is
applied by everyone, young and old, rich and poor, saint and sinner, enjoys the reputation of having the finest
restaurant in souther Iowa, in a town of this size. For years he was employed by the leading caterer of Burlington. He
came to Mt. Ayr in 1880 as a hotel cook, and shortly after began business on his own account with a very limited capital.
His business steadlily increased until today his name is a household word and his "Palace of Sweets", a thronged place.
There is a firm belief in the minds of Mt. Ayr people that there is a certain finness of finish about ice cream,
summer drinks, bakery goods, party suppers, and all the other things eatable and drinkable which it is a caterer's business
to which no one possesses the secret quite so well as does Mr. COLLINS. In fact, it is even refreshing for a hungry and
thirsty one to gaze on the tempting viands, ice cold lemonade, soda water, you simply revel in bliss in partaking of the
same.
NOTE: NOTE: Amos Finlay COLLINS was born November 1857, Jefferson County, Iowa, and died at the age of 76 years in 1933.
Sarah A. "Sally" Collins was born in August, 1855, Illinois, and died in 1936. They were interred at Rose Hill Cemetery, Mount Ayr.
