It's a legal process to make sure everything was done by the book and all heirs, creditors and assets were treated properly.

Probate records were created after a person's death. Not everyone went through probate, especially if there were insufficient assets to bother with and/or no will. If they didn't go through probate, there would be no records to view.

If they did go through probate and there was a will it would be included. A date of death would almost certainly be listed somewhere. Also the file would include the disposition of the deceased's assets per the will if there was one.

They can be valuable documents and contain much of interest about the person and their families.
