Martin, St. Joes, established in the early 1850's as St. Simon's, had a fire at the church in 1879 and most of the records were destroyed. There are churches closer to Deep Creek twp. than St. Joe's & St. Irenaeus tho I'm not sure when they were established. Charlotte, Petersville, Sugar Creek, Villa Nova & Delmar. And as you mentioned, possibly a church in Jackson co. I would suggest you contact the diocese of Davenport for any assistance they can provide. The Clinton co. gene society or Ann Soenksen at the Central Community Historical Society in De Witt could be of assistance also. The post office serving Deep Creek twp. in 1860 was Boone Springs which later became Goose Lake. Dick
