I browsed through the 1895 census for Mystic and found a scattering of S.A. listings toward the beginning. As I proceeded to browse the census images a different census taken was doing the recording and the entries changed to S. Advent.

So S.A. stands for Seventh-Day Adventist as someone else conjectured.
