Here are the instructions for the 1895 Iowa census but they don't appear to give any guidance on codes:

There was a large Eastern European community in Mystic, predominantly Catholic, who came to work in the mines there. Is that where a line of your family came from? If so, is there some order of the Catholic Church that's abbreviated SA?

Or could it just be bad handwriting and CA looks like SA?

If you look at other entries around your family you might be able to eliminate the Catholic option if you see CA multiple times.
