Carole Christine was born July 7, 1947, in Sioux City, Iowa, the daughter of Vernon and Esther (Laursen) Brown. It was here on the family farm at the foot of the Loess Hills in rural Monona County that Carole learned the work ethic that propelled her throughout her life. She graduated from West Monona Community High School. Carole, known as “CB” to her college friends, was a proud Iowa State Cyclone and earned her B.S. in Dietetics in 1970. She often commented how grateful she was for her Iowa State education and felt that her professional preparation at Iowa State was second to none. She did her internship at Cook County Hospital in Chicago and received her Nutritional Degree.

She was a Registered Dietitian at Omaha Methodist Hospital and Clarinda Correctional Facility. Later she traveled to nursing homes and hospitals as a consulting dietician.

Carole was a “foodie”. Whether she was perusing her 100+ cookbook collection to find just the right recipe for food to take to her wine club or enjoying a good meal (and wine) with friends, Carole was a master at wine and food pairings. Her patio garden always had fresh herbs scattered among her flowers to add to her own creations.

Carole grew up traveling with her family and continued to love the adventure of travel. As an adult she enjoyed trips to the former Soviet Union, Australia, and Mexico with her dad. She was a devoted dachshund lover and over the years, shared her life with many. Her dog frequently accompanied her when she was a consulting dietician.

Survivors include her sister, Emilie (Dave) Ellingson of Lincoln, Nebraska; brother, Earl (Donna) Brown of Roland, Iowa; nieces, Lauren (Craig) Johnson of Dillon, Montana, Marie Brown of Ankeny, Iowa, and Carrie Klaege of Tubac, Arizona; great-nieces; Olive Johnson of Dillion, Montana, Sierra Jones of Des Moines, Iowa, and Natalie, Sydnee, and Chloe Klaege of Tubac, Arizona; her beloved Dachshund, Greta; and cousins, many other relatives, and friends.

She is preceded in death by her parents, Vernon and Esther (Laursen) Brown.

Memorials in Carole’s memory may be donated to the Onawa Library Foundation, 707 Iowa Avenue, Onawa, Iowa, 51040 or AHeinz57 Pet Rescue, 4002 Ash Street, DeSoto, IA 50069.
