First - I have edited your query subject line adding the surname for those browsing the Queries.I can't find Eddson's death or burial place. I have looked in all resources available to me. From what I did find, it appears that he probably did not die in 1858 (Monona twp) or between June 1859 and June 1860 in Clayton county - or his death was not reported at all.
Ads printed in the North Iowa Times (McGregor) by Robert Carty indicate he operated the Eagle Saloon in Monona. Location was "one door east of Barr's Hotel and opposite the Egbert House".(1857 various dates). Searching all issues of the NIT I found no mention of Carty deaths. I also searched for any Carty death printed in Iowa papers for the time-period in question (NewspaperArchive). There was no Monona newspaper at the time.Coming from Ireland, he probably was Catholic (my assumption), making a Catholic cemetery the most likely place to bury his son. The closest Catholic cemetery to Monona between 1856 & 1860 was the Pioneer Catholic cemetery. The articles on the page will explain what happened to the cemetery. There is one name on the existing burial list that 'might' be a Carty child:
-No Surname baby, with no dates (back in those days a toddler was often described as an infant or baby)

It is possible that death/funeral/burial records are extant. I suggest contacting the church for guidance in finding the very old records from St. Richard's.

https://www.trinitycluster.com/IF the family was not Catholic, little Eddson could have been buried in any number of cemeteries, including the Monona City cemetery.
The 1858 mortality report for Monona twp. in 1858 does not include a Carty (or similar) death:
