It may be that his birth was on or near Aug 18, 1889 as a record exists on Familysearch.org of a baptism in Waverly, Bremer county in the Methodist Episcopal Church. The person named is Edward Wilson Chapman. There are several possibilities accounting for these differences. The year error could be poor penmanship or the indexer was unable to read the document accurately. Edward Chapman was not found on the 1900 census. There is remaining work to be done. I hope this helps.
