You're right about the "u" sound. The sound depends on whether it's a straight "u" or a "u" with an umlaut, i.e. ü.
ü is usually made into "ue" when it changes to English.

But an German e" is pronounced just like an English "e" and does not add an "r" sound. You can listen to it here.

Do you know where they were married? There might be a church marriage record that listed his place of residence before he came to America. You will need to know if he was Catholic or Lutheran.
