Education: Attended schools in Harlan, IA and graduated with the Harlan Community High School Class of 1979. She obtained her LPN degree in 1989 and later her RN degree in 1990.

Employment: In her younger years, Penny worked alongside her father milking cows at their family dairy. Penny worked as a CNA at the Baptist Memorial Home in Harlan, IA (which later became the Elm Crest Nursing Home). After receiving her LPN and RN degrees, she began her nursing career at the Salem Nursing Home in Elk Horn, IA; she then became the Director of Nurses at the Avoca Nursing and Rehab in Avoca, IA. She returned to Elm Crest in Harlan where she ran the Assisted Living section of the nursing home and finally was at the Manning Plaza Nursing Home in Manning, IA. Into her adult life she continued to work alongside her father, raising hogs and running a farrowing operation outside of Atlantic, IA. After she was married and the family moved to the farm outside of Kimballton, she started her own little herd of cattle, one bucket calf at a time. She also loved raising chickens.
