Education: graduated from St. Joseph’s High School in 1942 and received normal training to teach country school.

Religious affiliation: baptized and confirmed at St. Joseph’s Catholic Church in Earling, IA; she remained a member of St. Mary’s Catholic Church, Panama, IA; was a member of the Catholic Daughters of the Americas, Court St. Katherine, #266 of Earling, IA.

Marriage: Norbert “Nub” F. Assmann; Sep. 12, 1944; St. Joseph’s Catholic Church, Earling, IA.

Employment: After their marriage, Eunice and Nub farmed near Dunlap, then farmed north of Harlan, before finally moving to their own farm west of Panama. In 1969, Eunice and Norbert purchased a café and bar in Panama and operated “Nub’s Pub” in addition to farming. In Sep. 1982, the pub was destroyed by fire. It was rebuilt and reopened in Feb. 1983. In 1990, the couple retired from farming and moved into Panama 4 years later.

Hobbies/Interests: enjoyed raising her children and helping her husband farm. In addition, she had a large garden and liked to can its bounty.
