Vanishing Ancestor - Poor House?

I am looking at tracking down Patrick Caffrey (1853). He immigrated with his family (Parents Patrick and Honora Caffrey) to Knoxville in 1868. He was living with them on the 1870 Census. In the 1880 Census he was on the "impared/infirmed/insane" census listed as being a "pauper" in the Poor House in Knoxville having previously been in the Asylum in Mount Pleasant. And then he disappears. Is there any way I can get records for the Poor House? Would there be anything in court records of the time? Can you point me in the right direction to look for him? Thank you.
