Some other ideas for researching.
John Sr, was ill on the 1880 census and had died by the 1885 census. He may have had his estate go through probate, and if Eliza was married at that time, her married surname could be mentioned. Probate records are kept in the county clerk's office.

Also, if Eliza was married and then her husband died, there may have been a probate case opened to deal with the welfare of the child. This would be a little tougher, as you would have to search 1880-1885 for any probates dealing with a child named Charles or Edward, since you wouldn't know the surname.

Eliza may have been married and divorced. The divorce record would also be in the clerk's office.

My great grandparents married in Fayette County in Dec of 1880. Their marriage record isn't available online. So if you haven't checked the county recorder's office in West Union, there still could be a marriage record there for Eliza.
