Oysters au Gratin
Put 2 tbsp butter into sauce-pan. When melted add 2 tbsp flour, 1 C milk and stir until it thickens. When cooked, season with 1/2 tsp salt, a little pepper and 1 tsp chopped parsley. Butter a baking dish. Layer sauce, layer Larkin Cove Oysters. Sprinkle with salt and pepper, add more sauce and so on, until all used. Cover with bread-crumbs or Larkin Cracker meal. Dot thickly with butter and bake in a quick oven twenty-five minutes. 4 tbsp grated cheese added to the sauce improves the flavor for some people.
