APPLE BREAD

l Cup sugar
2 Cups all purpose flour
l teaspoon baking powder
l teaspoon baking soda
l/2 teaspoon salt
l/2 Cup shortening
2 eggs
l teaspoon vanilla
2 Cups chopped, pared apples
(about 4 medium sized apples)
l/2 Cup chopped nuts
l Tablespoon sugar
l teaspoon cinnamon.

Heat oven to 350 degrees. Grease and flour loaf pan, 9x5x3. Mix one cup sugar, shortening, eggs and vanilla. Stir in flour, baking powder, baking soda, and salt until smooth. Stir in apples and nuts. Spread in pan. Mix l Tablespoon sugar and l teaspoon cinnamon, and sprinkle over top.

Bake until wooden toothpick in center comes clean, 50-60 minutes. Immediately remove from pan to rack. Cool bread completely before slicing. Store tightly covered. Makes one loaf.
