Employment: Her work experience includes the Glenwood State Children’s School in Glenwood, a Pastry Chef at the Danish Bakery in Elk Horn as well as Librarian for 15 plus years at the Mingo Public Library in Mingo.

Hobbies/Interests: hobbies included being a devoted Chicago Cubs baseball fan and tending her beautiful flower gardens; member of The Bloomers Garden Club of Mingo and The Book Club of Mingo; baking and cooking; spending time with family and friends. Ellen was very proud of her Danish Heritage and continued the family tradition handed down to her of baking of Danish pastries, along with authentic Danish meal dishes.
